Cocoa dough cheesecake



This is an old cult recipe in my family. I found it a few years ago on a website of a Polish-German family, on which you can find a lot of other interesting recipes. The link to the original one is here. The cheesecake can be made in a round form (of approx. 26 cm), square or rectangular- I did it this time, but the cheesecake will be slightly lower. It all depends on your preferences, I thoroughly recommend :)





Ingredients for the dough:

- 3 cups of flour 
- 1/2 cup of sugar
- 250 g of butter
- 5 egg yolks
- 3 teaspoons of baking powder
- 2 tablespoons of cocoa powder
Ingredients for the cheese:

- 250 g of butter
- 300 g of sugar
- 1 kg of cheese for the cheesecake (depending on where you live you will have to choose a different kind of cheese. In Poland we have a special kind of cheese for the cheesecake, but when I lived in Denmark I used quark or Philadelphia) 
- 6 eggs
- 2 packets of powder vanilla pudding- juice and zest of 1 lemon

Chop the butter and put in a medium size bowl. Add the rest of the ingredients for the dough: sugar, flour, baking powder, cocoa and egg yolks. Knead the dough. Spread the bottom and the sides of the form with the two third of the dough. Put the rest in the freezer for 15 minutes. 
In the meantime prepare the cheese. Mix the butter with the sugar. Add one egg at the time still mixing. Then, add the cheese gradually and the lemon juice, zest and pudding at the end.
Pour the cheese mixture into the form and spread with the rest of the dough from the freezer using the grater.
Bake around 1 h in 220 Celsius degrees. Check if it's baked by using a wooden stick. If it comes out dry- it's done!
