Polish krokiety with cheese and champignons



Yesterday I went to the local supermarket thinking what to make for dinner. Then, on the fridge shell I saw a few ready-made items. Let's see, I thought. Ready made pierogi, noodles, curry, krokiety! Yes that was it :) But then, there goes a long list of ingredients which I cannot even pronounce...I was definitely not gonna eat that but I already had the craving for krokiety. I mustn't be that difficult- thin pancakes with stuffing fried in crunchy breadcrunch. Man, it took me two and a half hours to make (probably because it was my first time), but was it worth it? Absolutely! Try out one of the traditional Polish dishes. Often served at Polish weddings along with red borscht soup.




Ingredients (for approximately 6 pieces of krokiety):
 
Batter:
- 250 ml of milk
- 250 ml of water
- 2 eggs
- 2 cups of plain wheat flour

Stuffing:
- 500 g of champignions
- 2 cloves of garlic
- 1 medium onion
- 300g of grated mozzarella
- cayenne pepper/chilli
- salt and black pepper

Breading;
- 2 eggs
- salt and black pepper
- bread crumbles

+oil for frying


Instructions:

First make the pancakes. Beat the eggs with a hand mixer and add the liquids. Continue mixing and add the sifted flour. The batter should be smooth. Set a medium frying pan with little oil over a medium heat. Once it's hot enough pour a scoop of the pancake batter and distribute evenly all over the frying pan. The pancakes should be thin (like French crepes)! Once the pancake becomes golden underneath (check with a spatula) flip the pancake and fry until the other side becomes golden as well. Reapeat until you run out of the batter. Set the pancakes aside. Preferably separate them with kitchen paper towels (to absorb the extra oil).
Chop the onion and champignions into small cubes. Press the garlic. Set a frying pan with a tablespoon of oil over a medium heat. Fry the garlic and onions until they turn golden. Add the champignions and fry until they get fully cooked stiring from time to time. At the end spice with salt, pepper and optionally with chilli or cayenne pepper (if you like it more spicy).
Take one pancake and place 2 scoops of stuffing in the middle. Sprikle with grated mozzarella cheese. Fold the two side edges inside and roll the pancake from down to up. Reapeat with each pancake.






Lightly beat the eggs with a pich of salt and pepper on a flat plate. Dip the krokiety in the egg mixture and then in bread crumbles. Fry over medium heat for a few minutes on each side (until it becomes golden brown). Soak out the extra oil on a kitchen towel. Ready!
