Italian Prosciutto ham salad

I think this salad is perfect for summer- crispy, fresh and juicy! Personally, I have it as the main course and I don't need anything else, but you can as well share it with friends during a get-together.

The idea comes from the restaurant where I worked- we used all the ingredients like: Prosciutto ham, rucola salad, mozzarella, balsamic vinegar, pumpkin seeds, etc. for Italian meals. I just put them all together- in the symphony of taste ;)

The portion is enough for 2 persons if you both have it as the main course.








Ingredients:

- 200 g of whole wheat pasta (cook in slated water, cool with the cold water)
- 1/2 packet of salad mix (the more kinds of salads, the better!)
- a handful of rucloa leaves
- 8 cherry tomatoes (cut into halves)
- a few mini mozzarellas
- a quater of honey melon (pitted, peeled and cut into triangle slices)
- 4 slices of Prosciutto ham
- a handful of pumpkin seeds

For the sauce:

- 1 tablespoon of balsamic vinegar
- 3 tablespoons of Extra Virgin olive oil
- salt and pepper

In a big bowl place the rucola and salads and sprinkle them with salt, pepper, oil and vinegar and mix thoroughly. On a flat plate place the pasta and pour everything from the big bowl on top. Add melon, tomatoes, mini mozzarellas, pumpkin seeds and place the Prosciutto slices at the end- try to separate them into thinner slices and twist. Sprinkle some extra olive oil over the whole salad for extra look and taste. Enjoy!
